Blueberry and Banana Baked Oatmeal

Ingredients

  • 75g oats
  • 1 banana (mashed)
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 handfuls blueberries
  • handful raisins
  • handful walnuts
  • 7 tbsp almond milk
  • 1 banana (sliced)

Preparation

  1. Preheat the oven to 180°C.

  2. Soak 75g of oats in hot water and leave for 10 minutes.

  3. Meanwhile, make a cup of tea.

  4. Mash one banana.

  5. Add the mashed banana, 1 teaspoon cinnamon, 1 teaspoon vanilla, 2 handfuls of blueberries, a handful of raisins, a handful of walnuts, and 7 tablespoons almond milk to the oats and stir.

  6. Top with sliced banana.

  7. Bake for 25 minutes until golden and cakey.

  8. Leave to cool.

  9. Serve with soya yoghurt and almond butter.
