Blueberry and Banana Baked Oatmeal
Ingredients
- 75g oats
- 1 banana (mashed)
- 1 tsp cinnamon
- 1 tsp vanilla
- 2 handfuls blueberries
- handful raisins
- handful walnuts
- 7 tbsp almond milk
- 1 banana (sliced)
Preparation
Preheat the oven to 180°C.
Soak 75g of oats in hot water and leave for 10 minutes.
Meanwhile, make a cup of tea.
Mash one banana.
Add the mashed banana, 1 teaspoon cinnamon, 1 teaspoon vanilla, 2 handfuls of blueberries, a handful of raisins, a handful of walnuts, and 7 tablespoons almond milk to the oats and stir.
Top with sliced banana.
Bake for 25 minutes until golden and cakey.
Leave to cool.
Serve with soya yoghurt and almond butter.
