Two Minute Porridge Fingers

Ingredients

  • 10 tbsp oats
  • 10 tbsp almond milk (or other plant milk)
  • 1/2 banana
  • handful of blueberries / grated apple / grated carrot / raisins (or a mixture of those)
  • 1 tsp of cinnamon

Preparation

  1. In a shallow microwaveable dish soak the oats in the milk and mash the banana in with the back of a fork. Add the other ingredients and give it a good stir

  2. Let the mixture sit for two minutes before popping it in the microwave for two minutes on high

  3. Whilst the mixture is still hot, use a knife to cut the slices. Wait until they are completely cool before turning them out. They are best (less sticky) after an hour or more in the fridge! -
