Baked Vegan Donuts with Apple Slices

Ingredients

  • 4-5 apples, sliced, inner core removed
  • 1 cup whole wheat flour
  • 1/2 cup date sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup + 2 tablespoons plant milk
  • 1 flax egg (1 tablespoon ground flax seeds mixed with 3 tablespoons water, set for 10 minutes)
  • 1 tablespoon melted vegan butter
  • 1 teaspoon vanilla extract

Preparation

  1. Mix all the dry ingredients together in a bowl.

  2. Prepare the flax egg and set aside.

  3. Prepare the apples and cut them into thin slices with a hole in the middle.

  4. You will need a donut pan or something similar to get the donut shape; alternatively, use a muffin pan and create a hole in the middle.

  5. Add all the other ingredients to the bowl as well as the flax egg.

  6. Whisk until everything is well combined.

  7. Dip the apple slices into the donut batter, ensuring they are well covered, and place them onto the donut pan. Alternatively, put a bit of the dough in the pan, add the slices, and cover with more dough.

  8. Repeat the process and bake for around 10 minutes or until golden brown in the oven at 180°C.

  9. Optionally, roll the donuts in a cinnamon and sugar mixture after baking.
