Delicious Moist Banana Bread with Walnuts

Ingredients

  • 3 medium overripe bananas
  • 2/3 cup brown sugar
  • 1/3 cup canola oil
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 1 cup walnuts or choc chips (optional)

Preparation

  1. Preheat oven to 350° and line a 9-inch loaf pan with parchment paper.

  2. Peel bananas and put them into a large mixing bowl. Mash bananas well with a fork.

  3. Add brown sugar, oil, and vanilla to the bowl. Mix well.

  4. Add the flour to the bowl, then add the baking soda, cinnamon and salt.

  5. Stir everything together just until mixed. Over-mixing will result in a tougher texture.

  6. Fold in walnuts or chocolate chips if you’d like.

  7. Pour the batter into the loaf pan. Slice an additional banana in half (long ways) and place it on top.

  8. Bake for 50 minutes. Check with toothpick!

  9. Remove pan from oven and transfer it to cooling rack. Let cool for at least 15 minutes before removing it from the pan to slice and serve.
