Vegan Pecan Banana Bread
Ingredients
- 1 3/4 cups flour
- 1/3 cup coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 1/3 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 3 large overripe bananas, mashed
- 1/4 cup coconut milk @plenishdrinks / any m*lk
- 1/2 cup of crushed pecans, divided
Preparation
Preheat oven to 180°C. Grease your loaf pan.
In a medium-sized mixing bowl, mash 3 to 4 bananas, add oil and vanilla extract, and mix again.
Then add the flour, sugar, baking soda, baking powder, half of the pecans, and salt, and mix well but do not overmix, just until the flour is combined.
Pour batter into a greased loaf pan. Top with rest of pecans.
Bake for about 50 minutes to 1 hour or until a toothpick comes out clean.
