Delicious Berry Loaded Muffins with Fresh Fruits

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter
  • 3/4 cup brown sugar
  • 2 Tbsp chia seeds combined with 6 Tbsp water to replace 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas (I used 4 bananas)
  • 1 1/2 cup of fresh blackberries and blueberries (frozen would be fine as well)

Preparation

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Lightly grease a muffin pan.

  3. In a large bowl, combine flour, baking soda and salt.

  4. In a separate bowl, cream together butter and brown sugar.

  5. Stir in eggs and mashed bananas until well blended.

  6. Stir banana mixture into flour mixture; stir just to moisten.

  7. Gently fold in blackberries and blueberries.

  8. Scoop into prepared muffin pan.

  9. Bake in preheated oven for 30 minutes, until a toothpick inserted comes out clean.

  10. Allow to cool in pan for 10 minutes, then turn out onto a wire rack.
