Vegan Cinnamon Rolls with Maple Glaze

Ingredients

Dough

  • 2 cups almond milk
  • 1/2 cup melted vegan butter
  • 1/4 cup maple syrup
  • 1 tsp salt
  • 1 packet active dry yeast
  • 5 cups all-purpose flour

Filling

  • 3/4 cup softened vegan butter
  • 3/4 cup brown sugar
  • 2 tbsp cinnamon
  • additional flour to flour the surface for rolling

Glaze

  • 1/4 cup maple syrup
  • 1 cup confectioners sugar
  • 2 tbsp almond milk
  • 2 tbsp melted vegan butter
  • 1/2 tsp vanilla

Preparation

  1. Prepare the dough by mixing almond milk, melted butter, maple syrup, and salt in a large bowl. Sprinkle yeast over the mixture and let it sit for 5 minutes. Add flour and mix until dough forms, then cover and let rise for an hour.

  2. While the dough is rising, prepare the maple glaze by mixing all the glaze ingredients together and set aside.

  3. After the dough has risen, roll it out on a floured surface into a 1/4 inch thick rectangle. Spread the softened butter over it, then sprinkle with sugar and cinnamon.

  4. Roll the dough into a log and cut it into about 12 pinwheels. Place them in a baking dish close but not touching, cover, and let rise for another 30 minutes. Preheat the oven to 350.

  5. After 30 minutes, bake the rolls for 30-35 minutes until golden on top. Pour the glaze over them and enjoy.
