Vegan Pretzel Pizza with Boiled Crust

Ingredients

  • 4 1/2 cups bread flour
  • 1 tablespoon instant yeast
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 3 tablespoons avocado oil
  • 2 cups oat milk or water
  • 2 tablespoons molasses
  • 1 tablespoon baking soda
  • kosher salt for sprinkling

Preparation

  1. Mix dry ingredients then mix in the wet ingredients

  2. Knead or use stand mixer until a dough forms, about 10 minutes by hand

  3. Transfer to oiled container and let rise until doubled, 1 to 2 hours

  4. Divide into 2 equal parts and roll each into a ball, cover and let rise for 30 minutes

  5. Press out into pizza shape on parchment paper, place on baking sheet, cover and let rest in fridge for 30 minutes

  6. Bring a 12-inch saute pan of water to a boil and add in 2 tablespoons molasses and 1 tablespoon baking soda

  7. Place the crust on the parchment paper on the water and use a spoon to press the parchment under the water to separate dough from paper, then pull paper out and set on baking sheet

  8. Boil the dough for 3 minutes, scooping water into the top

  9. Carefully transfer the dough to a wire rack while pouring the pan out over the sink

  10. Flip the crust onto the parchment baking sheet

  11. Sprinkle some kosher salt onto the edge

  12. Top with stuff

  13. Bake at 450 degrees Fahrenheit for 12 to 15 minutes and enjoy
