Ingredients
- 300g all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 2 tablespoons [30g] melted vegan butter
- 175ml [3/4 cup] water
- oil for cooking and brushing
- chickpeas and potato curry - please check my blog for the full recipe & video
Preparation
Mix all dry ingredients in a large mixing bowl until well combined, then rub it with melted butter until you get a coarse sandy mixture.
Add in the water and knead into a unified mass, then transfer onto a cleaned surface and continue to knead into a smooth dough, about 10-15 mins Note: The dough will be sticky at first.
Divide dough into 5 portions and grease a pan. Rub each dough with oil and place them on the pan. Cover and let it rest for an hour.
Set up your work area and generously brush the surface with oil. Take a dough and roll it into a thin layer, then lift one side of the dough and fan-fold until you reach the end. Swirl it into a coil.
Pre-heat a non-stick pan with oil. Take a dough and flatten it with palm, then place the roti on the pan and fry it until golden brown of both sides.
Remove and clap roti with your palms and serve warm with curry.
