Blue Potato Sourdough

Ingredients

  • 300g bread flour
  • 200g wheat flour
  • 300g warm water
  • 30g starter
  • 10g salt
  • 150g blue potato puree

Preparation

  1. Dd in 30g active starter and warm water

  2. Add in flour and rough mix to let it autolyse for one hour

  3. Then add in the rest of the ingredients and do your first stretch + fold

  4. Then repeat stretch + folds 4-5 times in 45 minute intervals to build strength

  5. I also like to throw in some coil folds towards the end

  6. Bulk ride for 2-3 hours and set in the fridge overnight

  7. The next morning: warm dough to room temperature (~1 hour)

  8. Preshape and let it rise for 30 mins

  9. Then do a final shape and rise for 1 hour

  10. Bake at 475F for 25 mins with lid on, then remove lid and lower oven to 425F and bake for another 20 mins
