Oat and Raisin Cookies

Ingredients

  • 1 cup plain flour
  • 1.5 cups porridge oats
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup raisins
  • pinch of salt

Preparation

  1. In a large bowl, mix flour, cinnamon, baking powder and salt

  2. Set aside

  3. In a separate bowl, mix the brown sugar, granulated sugar and stir in the softened butter

  4. Crack the egg in and add the dash of vanilla extract and stir until fully combined

  5. Combine the two mixtures into one bowl and stir in the oats and raisins

  6. A thick, very sticky dough-like mixture should form

  7. Cover with cling film and pop in the fridge for 15 mins (or a few more if you have time on your side!)

  8. Meanwhile, preheat the oven to 180 degrees c and line or grease a baking tray

  9. When the time is up, remove from the fridge

  10. Scoop up heaped tablespoons of the dough and place on the baking tray in ‘cookie-like’ shapes

  11. Cook in the over for approx

  12. Minutes, or until the cookies turn lightly golden

  13. Leave to cool before serving to your friends
