4 Ingredient Pumpkin Pancakes
Ingredients
- 1/3 cup pumpkin purée
- 2 tsp coconut sugar
- 1 tbsp almond flour
- 1 tsp pumpkin pie spice(optional)
Preparation
Whisk the egg then add in everything else
Heat a skillet over low medium heat and wait for it to get hot before adding the batter
Add a little coconut oil or butter to the pan then add a spoonful of batter
Cook for 4 minutes then flip. Pay attention to the time because you don’t want to flip too early! Repeat for each pancake, I did 3 at once in my pan
Topped with maple syrup + Greek yogurt
