Single Serving Microwave Blueberry Banana Bread

Ingredients

  • 1 egg
  • 2 tbsp. almond milk
  • 1 small ripe banana (mashed)
  • 1/4 tsp. baking powder
  • 3 tbsp. almond flour
  • 1 tbsp. coconut flour
  • 1/2 tsp. cinnamon
  • 2-3 tbsp. blueberries

Preparation

  1. In a microwaveable mug, whisk together the egg, almond milk, and mashed banana.

  2. Stir in the dry ingredients, fold in the blueberries, and microwave for 2 1/2 minutes.

  3. Optionally top with banana slices, chia seeds, shredded coconut, and a drizzle of honey.
