Single Serving Microwave Blueberry Banana Bread
Ingredients
- 1 egg
- 2 tbsp. almond milk
- 1 small ripe banana (mashed)
- 1/4 tsp. baking powder
- 3 tbsp. almond flour
- 1 tbsp. coconut flour
- 1/2 tsp. cinnamon
- 2-3 tbsp. blueberries
Preparation
In a microwaveable mug, whisk together the egg, almond milk, and mashed banana.
Stir in the dry ingredients, fold in the blueberries, and microwave for 2 1/2 minutes.
Optionally top with banana slices, chia seeds, shredded coconut, and a drizzle of honey.
