Microwave Blueberry Banana Bread

Ingredients

  • 1 egg
  • 2 tbsp. almond milk {or any milk}
  • 1 small ripe banana
  • 1/4 tsp. baking powder
  • 3 tbsp. almond or cashew flour
  • 1 tbsp. coconut/oat/all purpose flour {or vanilla protein powder}
  • 1 tbsp. coconut sugar {optional}
  • 2-3 tbsp. blueberries

Preparation

  1. In a microwaveable mug, whisk together the egg, mashed banana, & almond milk

  2. Stir in the dry ingredients, fold in the blueberries, and microwave for 2 1/2 minutes! i topped mine with banana slices & coconut ッ
