Microwave Blueberry Banana Bread

Ingredients

  • 3 tbsp. almond flour
  • 2 tbsp. coconut flour
  • 1/4 tsp. baking powder
  • 2-3 tbsp. blueberries
  • 2 tbsp. almond milk
  • 1 small ripe banana
  • 1 egg

Preparation

  1. Whisk together the egg, mashed banana, and almond milk in a microwaveable mug or small bowl.

  2. Stir in the dry ingredients, fold in the blueberries, and microwave for 2 1/2 minutes.

Tips

  1. Cut into slices and top with banana slices and coconut.
