Ingredients

  • 3 tbsp. pumpkin purée
  • 2 tbsp. almond milk
  • 1 tbsp. honey
  • 1 egg
  • 1/4 tsp. baking powder
  • 3 tbsp. almond flour
  • 1 tbsp. coconut flour
  • 1 tsp. cinnamon

Preparation

  1. Stir all ingredients together and cook on low-medium heat

Tips

  1. You can make a mug cake version by omitting the almond milk, mixing the remaining ingredients in a microwaveable mug, and microwaving for 2 minutes

  2. Top with cashew butter and figs for added flavor
