Fluffy Homemade Pumpkin Pancakes
Ingredients
- 3 tbsp. pumpkin purée
- 2 tbsp. almond milk
- 1 tbsp. honey
- 1 egg
- 1/4 tsp. baking powder
- 3 tbsp. almond flour
- 1 tbsp. coconut flour
- 1 tsp. cinnamon
Preparation
Stir all ingredients together and cook on low-medium heat
Tips
You can make a mug cake version by omitting the almond milk, mixing the remaining ingredients in a microwaveable mug, and microwaving for 2 minutes
Top with cashew butter and figs for added flavor
