Paleo Gluten-Free Fluffy Pancakes
Ingredients
- 3 eggs
- 1 banana
- 1 1/2 cups almond flour
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 1/2 tsp baking powder
Optional add-ins
- nuts
- blueberries
- chocolate chips
Preparation
Heat a skillet over low medium heat.
In a bowl, whisk 3 eggs.
Mash 1 banana.
Add in 1 1/2 cups almond flour, 1 tsp cinnamon, 1 tsp vanilla, and 1 1/2 tsp baking powder.
Mix everything together.
Add optional nuts, blueberries, or chocolate chips if desired.
Add a little oil or butter to the skillet.
Make mini pancakes.
Cook for about 2 minutes, then flip and cook for 1 to 2 more minutes.
Tips
Make mini pancakes because they are easier to flip.
This recipe makes about 8 mini pancakes.
Top with butter and pure maple syrup for the best flavor.
