Paleo Gluten-Free Fluffy Pancakes

Ingredients

  • 3 eggs
  • 1 banana
  • 1 1/2 cups almond flour
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 1/2 tsp baking powder

Optional add-ins

  • nuts
  • blueberries
  • chocolate chips

Preparation

  1. Heat a skillet over low medium heat.

  2. In a bowl, whisk 3 eggs.

  3. Mash 1 banana.

  4. Add in 1 1/2 cups almond flour, 1 tsp cinnamon, 1 tsp vanilla, and 1 1/2 tsp baking powder.

  5. Mix everything together.

  6. Add optional nuts, blueberries, or chocolate chips if desired.

  7. Add a little oil or butter to the skillet.

  8. Make mini pancakes.

  9. Cook for about 2 minutes, then flip and cook for 1 to 2 more minutes.

Tips

  1. Make mini pancakes because they are easier to flip.

  2. This recipe makes about 8 mini pancakes.

  3. Top with butter and pure maple syrup for the best flavor.
