Chocolate Chunk Banana Bread

Ingredients

  • 1 egg
  • 2 tbsp almond milk
  • 1 small ripe banana, mashed
  • 1/4 tsp baking powder
  • 3 tbsp almond flour
  • 1 heaping tbsp cassava flour (or all-purpose or coconut flour)
  • 1/2 tsp ceylon cinnamon
  • 2 tbsp chocolate chips or chunks

Preparation

  1. In a microwaveable mug, whisk together the egg, almond milk, and mashed banana.

  2. Stir in the dry ingredients, fold in the chocolate, and microwave for 2.5 to 3 minutes.
