Chocolate Chunk Banana Bread
Ingredients
- 1 egg
- 2 tbsp almond milk
- 1 small ripe banana, mashed
- 1/4 tsp baking powder
- 3 tbsp almond flour
- 1 heaping tbsp cassava flour (or all-purpose or coconut flour)
- 1/2 tsp ceylon cinnamon
- 2 tbsp chocolate chips or chunks
Preparation
In a microwaveable mug, whisk together the egg, almond milk, and mashed banana.
Stir in the dry ingredients, fold in the chocolate, and microwave for 2.5 to 3 minutes.
