Easy and Tasty Egg Cups Two Ways

Ingredients

  • 10 eggs
  • 2 tablespoons milk (almond milk suggested)
  • salt
  • pepper
  • chili flakes

Toppings option 1

  • bacon
  • Parmesan cheese
  • red onion

Toppings option 2

  • spinach
  • Parmesan cheese
  • red onion
  • green pepper

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Prepare a muffin tin by oiling or spraying it.

  3. Combine 10 eggs, 2 tablespoons milk, salt, pepper, and chili flakes.

  4. Prep toppings: cook bacon, shred cheese, finely chop green pepper and red onion.

  5. Assemble by putting toppings in the muffin tin first, followed by the egg mixture.

  6. Bake for 25 minutes.
