Sweet Potato Crust Quiche with Spinach and Bacon
Ingredients
- Sweet potato
- 1 small diced onion
- Diced tomato
- Chopped cooked bacon
- 1/2 red pepper diced
- 4 handfuls spinach
- 8 eggs
- 1/4 cup almond milk
- Salt
- Pepper
- Chili flakes
- Crumbled goat cheese (optional)
Preparation
Cut sweet potato into rounds (some halved) and spread on a greased pie pan. Spray with cooking spray or grease with oil, then bake for 20 minutes at 375°F.
Sauté 1 small diced onion, then add diced tomato, chopped cooked bacon, 1/2 diced red pepper, and 4 handfuls of spinach. Cook for 8 minutes until vegetables are soft.
Spread the sautéed vegetables over the baked sweet potato crust.
Prepare egg mixture by combining 8 eggs, 1/4 cup almond milk, salt, pepper, and chili flakes.
Cover the vegetables with the egg mixture.
Top with crumbled goat cheese if desired.
Bake for 35 minutes.
