Quick Omelet Waffle Breakfast

Ingredients

  • 2 eggs
  • 1/4 cup almond milk
  • 1 tbsp nutritional yeast or cheese
  • Salt and pepper
  • Spray oil

Veggies

  • 1/4 bell pepper
  • 1/4 onion
  • 1/4 cup chopped spinach

Preparation

  1. Dice the bell pepper and onion really thin.

  2. Chop the spinach.

  3. Add to a bowl.

  4. Whisk the eggs, milk, and nutritional yeast or cheese in another small bowl and add salt and pepper.

  5. Heat your waffle iron.

  6. When it’s hot, spray with nonstick spray well.

  7. Add the veggies then pour the egg mixture on top.

  8. Cook for 1 minute, then flip.

  9. Cook for 2-3 more minutes.

  10. Remove and serve.

Tips

  1. This recipe takes less than 5 minutes to make.

  2. Pair with avocado, bacon, and sourdough bread for a complete meal.
