Soft Scrambled Eggs with Fresh Vegetables

Ingredients

  • 2 eggs
  • 2 handfuls of spinach
  • 1 baby cucumber
  • Handful of cherry tomatoes
  • 1/2 avocado
  • Handful of chopped lactose-free Jarlsberg cheese
  • Salt, pepper, and chili flakes

Preparation

  1. Heat olive oil in a frying pan; once hot, add spinach and season with salt and pepper; cook for 1 minute, then remove from heat.

  2. Whisk eggs until smooth, add to the hot pan with oil, push towards the middle, swirl the pan, and repeat for 1 minute.

  3. Chop the vegetables and assemble the bowls.
