Soft Scrambled Eggs with Fresh Vegetables
Ingredients
- 2 eggs
- 2 handfuls of spinach
- 1 baby cucumber
- Handful of cherry tomatoes
- 1/2 avocado
- Handful of chopped lactose-free Jarlsberg cheese
- Salt, pepper, and chili flakes
Preparation
Heat olive oil in a frying pan; once hot, add spinach and season with salt and pepper; cook for 1 minute, then remove from heat.
Whisk eggs until smooth, add to the hot pan with oil, push towards the middle, swirl the pan, and repeat for 1 minute.
Chop the vegetables and assemble the bowls.
Season and enjoy.
