Simple Mediterranean Vegetable Omelette
Ingredients
- 2-3 eggs
- 1/4 cup diced cherry tomatoes
- 1/4 cup diced red onion
- 1 handful of chopped spinach
- 1/3 cup crumbled feta
Preparation
Add a splash of oil to a medium skillet and add tomato and onion, cook stirring for 3 minutes.
Add spinach and cook for 1 more minute, then remove from heat.
Whisk together the eggs.
Add another splash of oil to the skillet and add the eggs.
Let cook for 1 minute, twirl the pan, and make little slits in the egg for it to set.
When almost set, add the toppings and cheese.
Fold both sides in and slide off the skillet onto a plate and enjoy.
Tips
Do not overcook the eggs.
The execution does not have to be perfect.
