Masala Omelette with Vegetables and Cheese

Ingredients

  • 3 eggs
  • 1/2 small red onion
  • Handful of coriander
  • 1 asparagus or other veggies
  • 4 cherry tomatoes, halved
  • 1/2 tsp turmeric
  • 1 optional chilli
  • About 30g grated cheese
  • 1 tsp oil

Preparation

  1. Chop up all the veggies and herbs

  2. Crack the eggs into a large bowl and whisk with a fork

  3. Add the veggies except the tomatoes, turmeric, and salt to taste to the eggs and mix well

  4. Heat the oil in a 15cm saucepan and pour in the egg mixture. Cook for a minute and add the sliced tomatoes and grated cheese

  5. Once the omelette starts to solidify, place it under a hot grill and watch it puff up

Tips

  1. Eggs are a great source of protein, vitamin D, B12, and iodine. Adding vegetables to omelettes helps meet your daily fruit and vegetable intake
