Masala Omelette with Vegetables and Cheese
Ingredients
- 3 eggs
- 1/2 small red onion
- Handful of coriander
- 1 asparagus or other veggies
- 4 cherry tomatoes, halved
- 1/2 tsp turmeric
- 1 optional chilli
- About 30g grated cheese
- 1 tsp oil
Preparation
Chop up all the veggies and herbs
Crack the eggs into a large bowl and whisk with a fork
Add the veggies except the tomatoes, turmeric, and salt to taste to the eggs and mix well
Heat the oil in a 15cm saucepan and pour in the egg mixture. Cook for a minute and add the sliced tomatoes and grated cheese
Once the omelette starts to solidify, place it under a hot grill and watch it puff up
