Vegetarian Breakfast with Poached Eggs and Hash Browns

Ingredients

  • Mini soda bread
  • Baby leaf spinach
  • Butterpak spreadable
  • 2 hash browns
  • 2 eggs
  • Sea salt
  • Chives
  • Chilli flakes

Preparation

  1. Preheat oven according to hash brown package instructions and bake the hash browns until cooked

  2. Split the mini soda bread and lightly toast it until golden

  3. Poach the eggs in simmering water with a splash of vinegar until the whites are set and yolks are runny

  4. Arrange baby leaf spinach on a plate as a base

  5. Place the toasted soda bread, cooked hash browns, and poached eggs on top of the spinach

  6. Spread butterpak on the soda bread if desired

  7. Season the dish with sea salt, chives, and chilli flakes to taste
