Spiced Turmeric Vegetable Omelette
Ingredients
- 3 eggs
- Handful of cherry tomatoes
- Handful of baby spinach leaves
- 4 tender stem broccoli
- Small chunk sliced red onion
- 1 teaspoon turmeric
- Few sprigs chopped coriander
- Salt, pepper and chilli flakes to taste
- 1/2 teaspoon oil to cook
- Optional grated cheese
Preparation
Whisk up the eggs and add in the veggies
Heat oil in frying pan
Pour in the mix, sprinkle on cheese and cook for a couple of minutes
Pop under a grill to finish cooking for 1-2 minutes
Tips
Serve with a slice of buttery sourdough
This is family-friendly and suitable for children from 6 months old
Incorporate any vegetables you have in the fridge or freezer
Add spice to taste for flavor
