Spiced Turmeric Vegetable Omelette

Ingredients

  • 3 eggs
  • Handful of cherry tomatoes
  • Handful of baby spinach leaves
  • 4 tender stem broccoli
  • Small chunk sliced red onion
  • 1 teaspoon turmeric
  • Few sprigs chopped coriander
  • Salt, pepper and chilli flakes to taste
  • 1/2 teaspoon oil to cook
  • Optional grated cheese

Preparation

  1. Whisk up the eggs and add in the veggies

  2. Heat oil in frying pan

  3. Pour in the mix, sprinkle on cheese and cook for a couple of minutes

  4. Pop under a grill to finish cooking for 1-2 minutes

Tips

  1. Serve with a slice of buttery sourdough

  2. This is family-friendly and suitable for children from 6 months old

  3. Incorporate any vegetables you have in the fridge or freezer

  4. Add spice to taste for flavor
