Caramelised Onion Eggs
Ingredients
- 2 onions finely sliced
- 2 - 3 tbsp oil
- Salt (to taste)
- Eggs (as needed)
- 4 - 6 cherry tomatoes sliced in half
- Chilli flakes/Pul Biber
- Ground black pepper
- Fresh herb for garnishing (coriander, parsley, basil, etc)
Preparation
Add 2 - 3 tbsp oil to a large frying pan. Once hot, add the sliced onions and sauté over low heat until brown and reduced. Stir to prevent burning; this takes about 15 - 20 mins.
Once onions are brown and a third of their original size, add salt to taste. Sauté for a few more minutes.
Spread onions out and crack eggs over the top. Top with tomatoes, chilli flakes, and black pepper. Cover with a lid to help eggs cook.
Once eggs are cooked to desired consistency, garnish with fresh herb of choice. Serve with crusty bread. Enjoy!
