Plant-Based Tiktok Pasta with Homemade Feta Alternative

Ingredients

  • 200g tofu
  • 1/2 cup soaked cashews
  • 1 tablespoon apple cider vinegar
  • Salt and pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons nutritional yeast
  • Splash of lemon
  • 2.5 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cups pasta
  • 1 handful basil
  • Chilli flakes

Preparation

  1. Preheat the oven to 200 degrees Celsius.

  2. Blend tofu, soaked cashews, apple cider vinegar, garlic powder, lemon, and nutritional yeast together.

  3. Season the mixture with salt and pepper.

  4. In a casserole dish, place the cherry tomatoes and drizzle with olive oil. Season with salt and pepper.

  5. Pour the "plant-based feta tofu" mixture into the middle of the casserole and shape it into a rectangle.

  6. Bake for about 40 minutes or until the cherry tomatoes have burst.

  7. While baking, cook the pasta according to the package instructions.

  8. Mix a handful of basil into the tomato and feta mixture.

  9. Serve the plant-based feta tomato mixture over cooked pasta. Sprinkle with chili flakes and a splash of lemon.
