Baked Eggs in Tomato Cups

Ingredients

  • 4 beef tomatoes
  • 4 chicken eggs
  • 50g grated cheddar cheese
  • 2 tablespoons oil
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground black pepper

Garnish

  • 2 tablespoons finely chopped scallions

Preparation

  1. Cut off the top of the tomato and remove some flesh and seeds to form a cup.

  2. Pour oil into the tomato cup and sprinkle with a little salt and pepper.

  3. Add half of the grated cheese to the bottom of the tomato, then add the egg and scallions. Top with the remaining cheese, salt, and pepper.

  4. Bake at 180°C for 30 minutes.

  5. Remove from oven.

  6. Sprinkle with scallions and serve immediately.
