Carrot and Cheese Omelette Folded Flatbreads

Ingredients

  • 6 folded flatbreads
  • 2 small carrots, grated
  • 150g mature cheddar cheese, grated
  • 6 eggs
  • 1/2 tsp Pul Biber (Turkish Chilli flakes)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • salt (to taste)
  • 50ml milk
  • butter (as needed)
  • lettuce leaves to serve (optional)

Preparation

  1. Crack the eggs into a bowl and add the spices, seasoning, and milk, then whisk everything together.

  2. Melt a little butter in a non-stick frying pan, add a couple of spoonfuls of the egg batter and spread it out. As the egg cooks, add a little grated carrot and cheese to half of the omelette. Once the omelette has cooked through, carefully flip the other side over to cover the carrot and cheese side, press down to seal, and cook for 1 to 2 minutes. Then flip the entire omelette over and cook the other side for 1 to 2 minutes.

  3. Once cooked through, cut the omelette in half and serve it in lightly toasted flatbreads with lettuce leaves, and add sauce if desired.
