Feta Egg Breakfast Sandwich

Ingredients

  • 1 tablespoon olive oil
  • Feta cheese
  • 2 zucchini flowers
  • 2 eggs
  • 2 teaspoons miso chili oil
  • Salt
  • Pepper
  • Hummus
  • Bread for toast
  • Handful of spinach

Preparation

  1. Heat olive oil in a pan over medium heat

  2. Crumble feta cheese in a circle in the pan

  3. Lay 2 zucchini flowers in the middle of the feta

  4. Crack 2 eggs on top of the mixture

  5. Add 2 teaspoons miso chili oil and season with salt and pepper

  6. Cover the pan and cook until the eggs are done to your liking

  7. Spread hummus on toasted bread and top with a handful of spinach

  8. Place the cooked egg mixture on top of the toast and serve
