Griddle Sandwiches with Eggs and Cheese
Ingredients
- 2 tablespoons butter
- 1/2 cup chopped pastrami
- 3 large eggs
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons milk
- 1/2 cup shredded cheddar cheese
- 1 green onion, chopped
- 1/2 medium tomato, sliced
- 4 slices pickled green pepper
- 1 griddle bread loaf
Preparation
Place the griddle bread loaf on a wide plate and keep it beside you.
Place a tablespoon of butter in a wide skillet and put the skillet on medium heat. Add the pastrami and stir for a few seconds to toast only. Place the pastrami on the bread.
In a deep bowl, place the eggs, salt, and pepper, whisk the eggs with a whisk until well combined.
Place the remaining butter in the skillet and add the eggs, stir the eggs with a wide plastic spoon for a minute. Spread the eggs over the pastrami.
Put the skillet on low heat.
Spread the cheese, onion, tomato, and pepper over the eggs and pastrami. Lightly roll the bread over the ingredients then place it in the skillet. Press on the bread using a heavy metal piece or a wide spoon so that the bread toasts, the cheese melts, and the filling holds together. Flip the bread slowly to the other side and press until the bread is golden and toasted.
Cut the bread into four pieces and serve immediately with olives and pickles.
