Cheesy Baked Eggs in Toast

Ingredients

  • 1 package thick toast bread
  • 1/4 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 6-8 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-3 tablespoons sliced black olives

Preparation

  1. Place the oven rack in the middle position and preheat the oven to 180°C.

  2. Prepare a shallow baking sheet. Lay out half of the bread slices on the counter and use a round cookie cutter to cut a circle from the center of each. Do not discard the cutouts; place them in the baking sheet to toast along with the rest.

  3. Using a wide metal knife, spread cottage cheese on the remaining bread slices. Place the cutout piece on top of each cottage cheese-spread slice.

  4. Sprinkle a small amount of cheddar and mozzarella cheese in the center of the bread slices.

  5. Arrange the prepared toast slices in the baking sheet.

  6. Crack an egg into the center of each bread slice. Season with salt and pepper, add sliced black olives on top of the eggs, sprinkle with a little cheddar or mozzarella cheese, and drizzle a few drops of olive oil around the edges of the bread to help it crisp up during baking.

  7. Bake in the oven for 10 to 15 minutes or until the eggs are fully cooked.

  8. Serve the baked eggs on toast immediately with pickles and vegetables.
