Fried and Baked Potato Slices with Cheese
Ingredients
- 4 large potatoes
- 1/2 cup ketchup
- 1 medium sweet green pepper, thinly sliced into rounds
- 1/4 cup black olives, sliced
- 2 tablespoons chopped parsley
- 1 large tomato, chopped
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
For frying
- Corn oil
For garnishing
- Chopped parsley
Preparation
Cut the potatoes into wide slices about 1 inch thick.
In a deep frying pan, add oil to a height of about 2 inches and heat over medium heat.
Fry the potato slices until golden brown and fully cooked, then drain on kitchen paper.
Arrange the potato slices in a shallow-rimmed tray. Spread ketchup over them, add sliced pepper, olives, parsley, tomato, mozzarella cheese, and cheddar cheese.
Bake in the oven for 5 minutes or until the cheese is golden. Serve hot.
