Fried and Baked Potato Slices with Cheese

Ingredients

  • 4 large potatoes
  • 1/2 cup ketchup
  • 1 medium sweet green pepper, thinly sliced into rounds
  • 1/4 cup black olives, sliced
  • 2 tablespoons chopped parsley
  • 1 large tomato, chopped
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

For frying

  • Corn oil

For garnishing

  • Chopped parsley

Preparation

  1. Cut the potatoes into wide slices about 1 inch thick.

  2. In a deep frying pan, add oil to a height of about 2 inches and heat over medium heat.

  3. Fry the potato slices until golden brown and fully cooked, then drain on kitchen paper.

  4. Arrange the potato slices in a shallow-rimmed tray. Spread ketchup over them, add sliced pepper, olives, parsley, tomato, mozzarella cheese, and cheddar cheese.

  5. Bake in the oven for 5 minutes or until the cheese is golden. Serve hot.
