Customizable Baked Egg Bites

Ingredients

Base

  • 8 eggs
  • 1 cup cottage cheese
  • 1 pinch salt

Potato, bacon, chive, and cheddar filling

  • 3 cups new potatoes
  • 6 strips bacon
  • 1/2 cup chives
  • 1.5 cups cheddar cheese

Bacon, leeks, shallots, and swiss filling

  • 6 strips bacon
  • 1 leek
  • 2 shallots
  • 1.5 cups Swiss cheese

Asparagus, green onion, and parmesan filling

  • 2 cups asparagus
  • 3 green onions
  • 1.5 oz Parmesan

Preparation

  1. Prepare your chosen filling by cooking the ingredients: boil halved new potatoes for 5 minutes if using that filling, cook and crumble bacon, sauté sliced leeks and diced shallots until soft, and use asparagus raw or lightly cooked.

  2. Blend the base ingredients for 1 minute.

  3. Pour the mixture into a greased muffin tin with the prepared filling distributed evenly.

  4. Bake at 350°F for 20-25 minutes or until the eggs are set.

Tips

  1. Ensure eggs are cooked to 160°F for food safety.
