Oven-Baked Vegetable Frittata

Ingredients

  • 2 medium grated zucchinis
  • 2 medium grated carrots
  • 1 medium mashed potato
  • 1 small chopped hot pepper
  • 1/2 medium chopped sweet green pepper
  • 1/2 cup cubed cream cheese
  • 8 large eggs
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1/2 teaspoon mixed spices
  • 1/2 teaspoon dried thyme

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C.

  2. Grease a 10-inch baking dish with butter.

  3. In a wide skillet, place the zucchini, carrots, potato, hot pepper, and sweet pepper. Cook over medium heat, stirring with a wooden spoon until roasted, then transfer to the baking dish.

  4. Spread the cheese cubes over the vegetables.

  5. In a deep bowl, place the eggs, water, salt, and spices. Whisk with a hand whisk for 2 minutes.

  6. Pour the egg mixture over the vegetables and cheese, sprinkle with thyme.

  7. Bake in the oven for 30 minutes until done and browned.
