Oven-Baked Vegetable Frittata
Ingredients
- 2 medium grated zucchinis
- 2 medium grated carrots
- 1 medium mashed potato
- 1 small chopped hot pepper
- 1/2 medium chopped sweet green pepper
- 1/2 cup cubed cream cheese
- 8 large eggs
- 2 tablespoons water
- 1 teaspoon salt
- 1/2 teaspoon mixed spices
- 1/2 teaspoon dried thyme
Preparation
Set the oven rack in the middle and preheat the oven to 180°C.
Grease a 10-inch baking dish with butter.
In a wide skillet, place the zucchini, carrots, potato, hot pepper, and sweet pepper. Cook over medium heat, stirring with a wooden spoon until roasted, then transfer to the baking dish.
Spread the cheese cubes over the vegetables.
In a deep bowl, place the eggs, water, salt, and spices. Whisk with a hand whisk for 2 minutes.
Pour the egg mixture over the vegetables and cheese, sprinkle with thyme.
Bake in the oven for 30 minutes until done and browned.
