Easy Oven-Baked Vegetable Fritters

Ingredients

  • 2 medium zucchinis, grated
  • 2 medium carrots, grated
  • 2-3 medium potatoes, grated
  • 1 medium onion, finely chopped
  • Half a package baking powder
  • Less than half a bunch parsley, finely chopped
  • 1 tea cup corn flour
  • 1 cup all-purpose flour
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, to taste
  • 2 eggs

Optional additions

  • A bit of dill, chopped

Preparation

  1. Grate the zucchinis, carrots, and potatoes, then squeeze out the excess water with your hands.

  2. Finely chop the onion and parsley.

  3. In a large bowl, combine all the ingredients except the optional dill, and mix well to form a batter. If the mixture is too wet, add 1-2 tablespoons of additional flour.

  4. Preheat the oven to 170-180°C.

  5. Transfer the mixture to a greased baking dish or shape into patties on a baking sheet.

  6. Bake until golden brown and set, about 25-30 minutes.
