Easy Oven-Baked Vegetable Fritters
Ingredients
- 2 medium zucchinis, grated
- 2 medium carrots, grated
- 2-3 medium potatoes, grated
- 1 medium onion, finely chopped
- Half a package baking powder
- Less than half a bunch parsley, finely chopped
- 1 tea cup corn flour
- 1 cup all-purpose flour
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes, to taste
- 2 eggs
Optional additions
- A bit of dill, chopped
Preparation
Grate the zucchinis, carrots, and potatoes, then squeeze out the excess water with your hands.
Finely chop the onion and parsley.
In a large bowl, combine all the ingredients except the optional dill, and mix well to form a batter. If the mixture is too wet, add 1-2 tablespoons of additional flour.
Preheat the oven to 170-180°C.
Transfer the mixture to a greased baking dish or shape into patties on a baking sheet.
Bake until golden brown and set, about 25-30 minutes.
