Baked Accordion Dijon Maple Potatoes
Ingredients
- 8 medium potatoes
- 2 tablespoon olive oil (plus 1 tablespoon for herb dressing)
- 2 tablespoon Dijon mustard
- 1 teaspoon dry thyme (or herbs de Provence)
- 1 1/2 tablespoon maple syrup
- 1/3 teaspoon salt
- 1/3 teaspoon black pepper
- 2-3 sprigs parsley
- 1 sprig basil
Preparation
Using a sharp knife, cut potatoes about 1/9 inch apart, stopping about 1/4 inch from the bottom. Place sticks on the bottom when cutting to ensure that you don’t cut all the way through.
Place potatoes on baking tray.
In a small bowl mix Dijon mustard, maple syrup, olive oil, thyme, salt and pepper.
Brush each potato generously with mustard maple marinade.
Bake the potatoes for 35-40 minutes or until garden brown and tender.
Chop parsley and basil and mix with remaining mustard maple marinade.
Sprinkle baked potatoes with herbed marinade and enjoy!
