Spinach Börek with Whole Wheat Dough

Ingredients

  • 3 cups all-purpose flour
  • 2 cups whole wheat flour
  • Approximately 1.5 cups water
  • 1 teaspoon salt

Filling

  • 500 grams spinach
  • 3 onions
  • Half bunch parsley
  • 1 teaspoon paprika paste or powder
  • Half teaspoon black pepper
  • Olive oil

Preparation

  1. Mix flour and salt in a bowl and add water little by little to knead a dough soft as an earlobe

  2. Wash and chop the spinach, massage it with salt and squeeze out the water

  3. Chop the onions and sauté them lightly, then add paprika paste or powder and cook a bit more before cooling

  4. Mix the cooled onion mixture with the spinach, add chopped parsley and black pepper to prepare the filling

  5. Divide the dough into 9 mandarin-sized pieces and let them rest for 15 minutes

  6. Oil the baking tray thoroughly

  7. Roll out the dough sheets and layer them in the tray, oiling each sheet and adding filling every two layers with less filling on the first and third layers and more in the middle

  8. After all layers are done, slice the börek, drizzle with plenty of olive oil and bake at 180 degrees Celsius until the top is golden brown

Tips

  1. Use high-quality whole wheat flour and sift it before using for better results

  2. Always use olive oil instead of sunflower oil to avoid a tough texture

  3. For those without access to village flour, a mix of flours can be used but ensure it browns well
