Hand-Rolled Turkish Potato Börek
Ingredients
- 2 tablespoons yogurt
- 1/4 cup vegetable oil
- 5 cups flour
- 2 teaspoons salt
- Water as needed
Filling
- 7-8 potatoes
- 2 onions
- Salt to taste
- Black pepper to taste
- Red pepper flakes to taste
- Oil for sautéing
Brushing
- 1 cup vegetable oil
- 1 egg yolk
Preparation
Add water gradually and knead to make a soft dough
Divide the dough into mandarin-sized pieces and cover, let rest for 20 minutes
Boil 7-8 potatoes, peel and mash them
Chop 2 onions and sauté in oil until pinkish, add mashed potatoes, salt, black pepper, and red pepper flakes, stir and let cool
Roll out each dough piece as thin as possible
Brush with 2 tablespoons of vegetable oil and sprinkle potatoes evenly but scattered
Roll into a log shape and then coil it around itself
Mix 2 tablespoons of vegetable oil with one egg yolk and brush over the top
Bake at 200 degrees Celsius with top and bottom heat until golden brown on top and bottom
