Crispy Minced Meat Borek

Ingredients

  • 4 sheets thin ready-made phyllo dough
  • 1 tablespoon starch
  • 1 teacup vegetable oil
  • 1.5 cups water
  • 1 egg white
  • 1 egg yolk
  • 250 grams ground meat
  • 3 onions
  • less than 1 teaspoon red pepper flakes
  • black pepper to taste
  • salt to taste

Filling

  • Additional water for softening (about 1 coffee cup)

Preparation

  1. Grate the onions and mix with ground meat, drain the juice, add red pepper flakes, black pepper, salt, and about 1 coffee cup of water to soften the mixture.

  2. Prepare the sauce by whisking together starch, water, vegetable oil, and egg white.

  3. Spread a phyllo sheet on the counter, brush with the sauce, fold the edges slightly inward, place the filling lengthwise on the front part, roll up, and shape.

  4. Place the first roll in the center of the baking tray and wrap the other prepared rolls around it.

  5. After assembling, brush with the remaining sauce and let rest for 10 minutes.

  6. Bake in an oven at 180°C until lightly browned.

  7. Brush with egg yolk and continue baking until golden brown.
