Rose-Shaped Potato Borek
Ingredients
- 5 sheets of phyllo dough
Filling
- 7-8 potatoes
- 2 onions
- 1 tablespoon tomato paste
- Vegetable oil
- Salt
- Thyme
- Mint
- Black pepper
- Red pepper flakes
Sauce
- 1 teacup yogurt
- 1 teacup vegetable oil
- 1 teacup milk
- 2 eggs
- Salt
Topping
- Sesame seeds
- Nigella seeds
Preparation
First, prepare the filling by peeling and chopping the potatoes, then boil them until soft.
Mash the boiled potatoes.
Add the spices to the mashed potatoes and mix well.
Chop the onions finely and sauté them in vegetable oil until they turn pink.
Add the tomato paste to the onions and stir.
Mix in the mashed potatoes with the onion mixture and cook for another 4-5 minutes, then turn off the heat and let it rest.
Cut one sheet of phyllo dough into four triangular pieces.
Brush the triangular phyllo piece with the prepared sauce.
Place some of the filling mixture on the wide end of the triangle and spread it lengthwise.
Roll it up into a cylindrical shape.
Shape the roll into a rose by curling it from one end.
Repeat the same process with the remaining phyllo sheets until all are used.
Place the shaped borek rolls in a greased baking tray.
Brush the remaining sauce over the borek using a brush.
Sprinkle sesame seeds and nigella seeds on top.
Bake in a preheated oven at 180 degrees Celsius until golden brown on all sides, about 35-40 minutes. Enjoy your meal.
Notes
This borek can also be made with cheese, meat, or spinach fillings for different flavors.
