Flaky Dill and Cheese Pastry

Ingredients

  • 100 g butter
  • Slightly less than 1 cup vegetable oil
  • 1/2 cup yogurt
  • 2 eggs
  • 1 packet baking powder
  • 1 teaspoon vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon mahlep (optional)
  • 1/2 bunch chopped dill
  • 3.5-4 cups flour

Filling

  • White cheese

Topping

  • Egg yolk
  • Sesame seeds
  • Nigella seeds

Preparation

  1. Take softened butter and other dough ingredients except dill and additional flour into a mixing bowl, knead into a soft, non-sticky dough. Add the remaining flour gradually as needed. Mix in the chopped dill last.

  2. Pinch off small pieces of dough, flatten them in your hand, place a piece of white cheese in the center, and shape into poğaça.

  3. Arrange the pastries on a parchment-lined baking sheet. Brush with a mixture of reserved egg yolk and 1 teaspoon olive oil, then sprinkle with sesame and nigella seeds.

  4. Bake in a preheated oven at 190°C until golden brown.
