Flaky Dill and Cheese Pastry
Ingredients
- 100 g butter
- Slightly less than 1 cup vegetable oil
- 1/2 cup yogurt
- 2 eggs
- 1 packet baking powder
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon mahlep (optional)
- 1/2 bunch chopped dill
- 3.5-4 cups flour
Filling
- White cheese
Topping
- Egg yolk
- Sesame seeds
- Nigella seeds
Preparation
Take softened butter and other dough ingredients except dill and additional flour into a mixing bowl, knead into a soft, non-sticky dough. Add the remaining flour gradually as needed. Mix in the chopped dill last.
Pinch off small pieces of dough, flatten them in your hand, place a piece of white cheese in the center, and shape into poğaça.
Arrange the pastries on a parchment-lined baking sheet. Brush with a mixture of reserved egg yolk and 1 teaspoon olive oil, then sprinkle with sesame and nigella seeds.
Bake in a preheated oven at 190°C until golden brown.
