Turkish Dill-Flavored Flaky Pastry
Ingredients
- 100 grams butter
- Slightly less than 1 cup vegetable oil
- 1/2 cup yogurt
- 2 eggs
- 1 packet baking powder
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon mahleb (optional)
- 1/2 bunch chopped dill
- 3.5 to 4 cups flour
- 1 teaspoon olive oil
Filling
- White cheese
Topping
- Sesame seeds
- Nigella seeds
Preparation
Take softened butter at room temperature and other ingredients in a mixing bowl, knead into a soft dough that does not stick to hands but is soft, add flour beyond 3 cups gradually, and finally mix in the chopped dill.
Break off small pieces of dough, flatten in your palm, place cheese in the center, and shape into poğaça.
Arrange on a baking sheet lined with parchment paper.
Brush with egg yolk mixed with 1 teaspoon olive oil and sprinkle with sesame and nigella seeds.
Bake in a preheated oven at 190°C until golden.
