Turkish Dill-Flavored Flaky Pastry

Ingredients

  • 100 grams butter
  • Slightly less than 1 cup vegetable oil
  • 1/2 cup yogurt
  • 2 eggs
  • 1 packet baking powder
  • 1 teaspoon vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon mahleb (optional)
  • 1/2 bunch chopped dill
  • 3.5 to 4 cups flour
  • 1 teaspoon olive oil

Filling

  • White cheese

Topping

  • Sesame seeds
  • Nigella seeds

Preparation

  1. Take softened butter at room temperature and other ingredients in a mixing bowl, knead into a soft dough that does not stick to hands but is soft, add flour beyond 3 cups gradually, and finally mix in the chopped dill.

  2. Break off small pieces of dough, flatten in your palm, place cheese in the center, and shape into poğaça.

  3. Arrange on a baking sheet lined with parchment paper.

  4. Brush with egg yolk mixed with 1 teaspoon olive oil and sprinkle with sesame and nigella seeds.

  5. Bake in a preheated oven at 190°C until golden.
