Turkish Spinach and Cheese Börek

Ingredients

  • 1 cup milk
  • 1 cup yogurt
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 packet baking powder
  • 6 phyllo sheets

Filling

  • 1 kg spinach
  • 2 onions
  • 1/4 cup vegetable oil
  • salt
  • black pepper
  • 2 tablespoons tomato paste
  • 200 grams Ezine cheese

Preparation

  1. Wash and chop the spinach and onions.

  2. Cook the onions until they turn pink, then add the tomato paste.

  3. Add the squeezed spinach, salt, and black pepper, and stir until the water evaporates.

  4. Whisk together the vegetable oil, milk, yogurt, and eggs for the sauce.

  5. Spread one phyllo sheet and coat it entirely with the sauce, then divide it into four pieces.

  6. Sprinkle the spinach filling on each piece and roll them in the shape of a rose börek.

  7. Brush the remaining sauce on top of the rolls.

  8. Bake in an oven at 200 degrees Celsius.
