Easy Savory Turkish Cookies
Ingredients
- 150 grams butter, softened
- 1/4 cup vegetable oil
- 1 egg white
- 2 tablespoons vinegar
- 2 tablespoons cold water
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 tablespoons starch
- 1 heaping teaspoon baking powder
- 3 cups flour
- Pinch of mahleb (optional)
Topping
- Egg yolk
- 2-3 tablespoons vegetable oil
- Nigella seeds, sesame seeds, or poppy seeds
Preparation
First, mix all ingredients except flour in a bowl by hand.
Sift in the flour gradually and mix until combined.
Knead the dough until it comes together and does not stick to hands.
Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
After chilling, divide the dough into walnut-sized pieces and shape as desired.
Place the shaped cookies on a parchment-lined baking sheet, spacing them apart.
Repeat with the remaining dough.
Mix the egg yolk with a little vegetable oil and brush it over the cookies.
Sprinkle with nigella seeds, sesame seeds, or poppy seeds.
Bake in a preheated 180°C oven until golden brown, about 25 minutes.
Tips
Chilling the dough helps it hold shape better and prevents oil separation.
