Soft Turkish Cheese Pastry
Ingredients
- 2 cups lukewarm water
- 1 tablespoon sugar
- 1 tablespoon dry yeast
- 1/2 cup vegetable oil
- 1/2 tablespoon salt
- 1 egg (yolk for topping, white for dough)
- 5.5 to 6 cups flour
Filling
- Cheese slices (such as kaşar)
Topping
- Egg yolk
- A bit of molasses
- Sesame seeds
Preparation
Mix water, sugar, and yeast thoroughly and let it sit for 10 minutes.
Add the remaining ingredients in order, mixing well, and gradually add flour to form a soft dough that slightly sticks to the hands.
Since the environment is warm, proceed without letting the dough rise.
Grease hands with a little margarine, shape the dough into pieces, flatten slightly, add cheese to one end, and roll up without sealing the edges.
Place the rolls on a baking sheet; some cheese may leak out.
Brush with a mixture of egg yolk and a bit of molasses, then sprinkle with sesame seeds.
Bake in a cold oven at 200°C until golden brown. If the oven cooks quickly, use 180°C instead.
Tips
Baking in a cold oven allows the dough to rise as the oven heats up.
Adjust baking temperature based on your oven's performance to avoid overcooking.
