Baked Vegetable Rose Tart
Ingredients
- 1 packet puff pastry
- 1/2 cup crumbled feta cheese
- 1/2 cup cream cheese
- 1 large egg
- 1/2 teaspoon black pepper
- 2 chopped green onions
- 1/4 cup chopped parsley
- 2 yellow zucchini
- 2 green zucchini
- 3 carrots
- 3 tablespoons olive oil
Preparation
Preheat the oven to 180 degrees Celsius and prepare a 10-inch round baking dish. You can use a square, rectangular, or tart pan with removable bottom.
On a floured surface, roll out the puff pastry to fit the dish and place it in the dish to cover the bottom and sides.
Trim any excess dough with a knife. You can use the scraps by cutting them into small pieces and placing them on the tart; they will be covered later.
In a bowl, combine the feta cheese, cream cheese, egg, black pepper, chopped green onions, and chopped parsley. Mix well and spread the mixture over the tart base.
Use a vegetable peeler to slice the zucchini and carrots into thin strips.
Roll a vegetable strip into a rose shape and place it on top of the filling in the tart. You can use other filling ideas if desired.
Repeat the process, arranging the rose shapes side by side with complementary colors.
Brush the surface of the vegetable roses with olive oil.
Bake in the preheated oven for about 30 minutes or until golden brown, then serve.
