Spicy Egg Mayo Sandwich
Ingredients
- 4 eggs
- 1 tablespoon Greek yogurt
- 1 tablespoon mayonnaise
- 1 tablespoon sriracha
- Celery
- Red onion
- Salt
- Black pepper
- Parsley
- 2 slices of white crusty bread
Preparation
Boil the eggs for 10 minutes, then remove and place in an ice bath.
In a bowl, add Greek yogurt, mayonnaise, sriracha, celery, red onion, parsley, and season with salt and pepper.
Peel and remove the yolks from 3 eggs. Add the yolks to the bowl and mash them with a fork. Finely chop the egg whites and add them to the bowl. Mix well.
Slice the fourth egg in half. Place the halves on one slice of bread and top with the egg mayo mixture.
Wrap tightly in baking paper, slice down the middle, and enjoy.
Tips
Use white crusty bread; sourdough is not recommended.
