Spiced Hash Browns for Breakfast

Ingredients

  • 2 small potatoes
  • 1/2 medium red onion
  • 1 red chili, deseeded
  • Handful of fresh coriander
  • 1/2 teaspoon turmeric
  • Salt to taste
  • Oil for frying

Preparation

  1. Peel and grate the potato and onion.

  2. Finely slice the chili and chop the coriander.

  3. Mix all the ingredients together with your hands and form small round patties, squeezing out excess water and making them as flat as possible for crispiness.

  4. Heat some oil in a frying pan over medium to high heat.

  5. Carefully lower the hash brown into the hot oil and press down with a spatula to flatten it more.

  6. Fry for a few minutes on each side until crispy and brown, then drain on kitchen paper.

  7. Enjoy immediately or top with a fried egg and/or avocado slices.
